Instructions
  1. First, make the Salted Caramel: In a saucepan, melt the Sugar over medium heat, stirring constantly until amber in color. Add the Butter and stir until melted. Slowly pour in the Heavy Cream and stir until smooth. Remove from heat and stir in the Sea Salt. Set aside to cool slightly.
  2. Prepare the Tempura Batter: In a bowl, whisk together the Flour and Egg. Gradually add the Ice Water, mixing lightly until just combined. Do not overmix.
  3. Peel the Bananas and cut each banana into 1-inch pieces.
  4. Spread a thin layer of Peanut Butter on each banana piece.
  5. Dip each peanut butter-covered banana piece into the Tempura Batter, ensuring it's fully coated.
  6. Heat the Canola Oil in a deep fryer or large pot to 350°F (175°C).
  7. Carefully place the battered banana bites into the hot oil and fry for 1-2 minutes, until golden brown and crispy.
  8. Remove the fried banana bites and place them on a wire rack to drain excess oil.
  9. Drizzle the Salted Caramel over the fried banana bites and serve immediately.
