  1. Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the Filling: In a large bowl, combine the sliced apples, sugar, flour, cinnamon, and nutmeg. Toss to coat.
  4. Roll out the chilled dough on a lightly floured surface and transfer it to a 9-inch pie plate. Trim and crimp the edges.
  5. Pour the apple filling into the pie crust. Dot the top with butter pieces and sprinkle with cheddar cheese.
  6. Bake in a preheated oven at 375°F (190°C) for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. Let cool slightly before serving.
