Instructions
  1. Make the Pastry: In a large bowl, combine the Pastry ingredients. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together.
  2. Wrap the dough in plastic wrap and chill for at least 30 minutes.
  3. Prepare the Mincemeat Filling: Stir the Brandy into the Mincemeat Filling.
  4. Roll out the pastry and cut out circles to fit a 12-cup muffin tin.
  5. Press the pastry into the muffin tin. Spoon the Mincemeat Filling into each pastry case.
  6. Roll out the Marzipan Layer and cut out circles slightly smaller than the muffin tin openings.
  7. Place a Marzipan Layer circle on top of each mince pie filling.
  8. Brush the edges of the pastry with the Egg Wash.
  9. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until golden brown.
  10. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
