Instructions
  1. Prepare the Crust: In a large bowl, combine the Crust ingredients. Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Flatten into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat oven to 375°F (190°C).
  3. Roll out the chilled dough on a lightly floured surface to a 12-inch circle. Transfer to a 9-inch tart pan with a removable bottom.
  4. Blind bake the crust for 15 minutes. Remove from oven and let cool slightly.
  5. Prepare the Filling: In a skillet, melt the Butter over medium heat. Add the Pears and Cinnamon and cook until softened, about 5-7 minutes.
  6. Arrange the cooked Pears in the pre-baked tart crust. Sprinkle with Blue cheese.
  7. Drizzle with Honey and bake for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.
  8. Let cool slightly before serving.
