Prepare the Cranberry Sauce: In a medium saucepan, combine all Cranberry Sauce ingredients. Bring to a boil over medium heat, then reduce heat and simmer for 10-15 minutes, or until cranberries have burst and the sauce has thickened. Let cool completely.
Assemble the Parfaits: In four glasses or parfait dishes, layer yogurt, granola, and cranberry sauce. Repeat layers until glasses are full.
Garnish with chopped nuts, if desired. Serve immediately or chill for later.
