Instructions
  1. Make the Pastry: In a large bowl, combine the Pastry flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Prepare the Filling: In a bowl, gently toss the Filling pears, blue cheese, honey, lemon juice, and cinnamon.
  4. Assemble the Galette: On a lightly floured surface, roll out the Pastry dough into a 12-inch circle. Transfer the dough to a baking sheet lined with parchment paper.
  5. Arrange the Filling in the center of the dough, leaving a 2-inch border. Fold the border over the filling, pleating as you go.
  6. Whisk together the Egg Wash egg and water. Brush the crust with the egg wash.
  7. Bake in a preheated oven at 375°F (190°C) for 30-35 minutes, or until the crust is golden brown and the filling is bubbly.
