Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, whisk together the Cake ingredients: flour, sugar, baking soda, salt.
- Add the softened butter, buttermilk, eggs, vanilla extract, and bourbon to the dry ingredients. Beat until just combined. Do not overmix.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the Butterscotch Sauce. In a medium saucepan, combine the brown sugar, butter, and heavy cream. Bring to a boil over medium heat, stirring constantly.
- Reduce heat and simmer for 5 minutes, stirring occasionally. Remove from heat and stir in the vanilla extract, bourbon, and salt.
- Once the cake is cooled slightly, poke holes all over the top with a fork. Pour the warm Butterscotch Sauce evenly over the cake.
- Let the cake cool completely before serving.
