Instructions
  1. Preheat oven to 425°F (220°C).
  2. To make the Biscuits, combine all Biscuit ingredients in a bowl. Cut in cold Butter using a pastry blender or your fingers until mixture resembles coarse crumbs. Gently stir in Heavy Cream until just combined. Do not overmix.
  3. Turn dough out onto a lightly floured surface and gently pat to 3/4 inch thickness. Cut out biscuits using a biscuit cutter or glass.
  4. Place biscuits on an ungreased baking sheet and bake for 15-18 minutes, or until golden brown.
  5. While biscuits are baking, to make the Gravy, cook diced Spam in a skillet over medium heat until lightly browned.
  6. Sprinkle Flour over the Spam and cook for 1 minute, stirring constantly.
  7. Deglaze the pan with Sherry, scraping up any browned bits. Cook for 1 minute.
  8. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened, about 10-12 minutes, allowing the flavors to meld.
  9. Season with White Pepper and Nutmeg. Stir in Fresh Parsley. Serve gravy hot over warm biscuits.
