To make the Biscuits, combine all Biscuit ingredients in a bowl. Cut in cold Butter using a pastry blender or your fingers until mixture resembles coarse crumbs. Stir in Buttermilk until just combined. Do not overmix.
Turn dough out onto a lightly floured surface and pat to 1/2 inch thickness. Cut out biscuits using a biscuit cutter or glass.
Place biscuits on an ungreased baking sheet and bake for 12-15 minutes, or until golden brown.
While biscuits are baking, to make the Gravy, cook diced Spam in a skillet over medium heat until lightly browned.
Sprinkle Flour over the Spam and cook for 1 minute, stirring constantly.
Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly, and cook until thickened, about 5-7 minutes.
Season with Black Pepper and Nutmeg. Serve gravy hot over warm biscuits.
