Instructions
- If making hand-pulled noodles, prepare according to your preferred method. Otherwise, purchase fresh hand-pulled noodles. Cook according to instructions. Drain and set aside.
- In a medium bowl, combine Chicken with Shaoxing wine, soy sauce, and cornstarch. Marinate for 15 minutes.
- In a small bowl, whisk together all Sauce ingredients. Set aside.
- Heat peanut oil in a wok over high heat. Add chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove from wok and set aside.
- Add Chinese broccoli and shiitake mushrooms to the wok and stir-fry for 2-3 minutes. Add scallions and stir-fry for 1 minute.
- Return the chicken to the wok. Pour the Sauce over the chicken and vegetables. Bring to a simmer and cook until the sauce has thickened slightly, about 1 minute.
- Add the cooked noodles to the wok and toss to combine thoroughly.
- Drizzle with toasted sesame oil and serve immediately.
