12 Flour tortillas-6 inch, high quality
8 oz Mascarpone cheese-room temperature
1/4 cup Powdered sugar
1 tsp Vanilla bean paste
2 tbsp Heavy cream

Decadent mascarpone cheesecake filling encased in flaky tortillas, air fried to perfection, and drizzled with a homemade salted caramel sauce.
Instructions
  1. First, prepare the Salted Caramel Drizzle: In a medium saucepan, melt the sugar over medium heat, stirring constantly until it turns into a golden amber caramel. Carefully whisk in the heavy cream (it will bubble vigorously). Remove from heat and whisk in the butter and sea salt. Let cool slightly.
  2. In a medium bowl, combine all Cheesecake Filling ingredients and beat until smooth and creamy.
  3. Lay out the Tortillas on a clean surface.
  4. Spread approximately 2 tablespoons of Cheesecake Filling down the center of each tortilla.
  5. Tightly roll up each tortilla and secure with toothpicks if needed.
  6. In a small bowl, mix together the Coating ingredients.
  7. Brush the rolled taquitos lightly with Oil.
  8. Dip each taquito into the Coating mixture, ensuring it's evenly coated.
  9. Place the coated taquitos in the air fryer basket in a single layer. You may need to work in batches.
  10. Air fry at 350°F (175°C) for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  11. Remove toothpicks (if used) and drizzle generously with the Salted Caramel Drizzle. Serve immediately.
