Instructions
  1. First, prepare the Berry Compote: In a small saucepan, combine all Berry Compote ingredients. Bring to a simmer over medium heat and cook for 10-15 minutes, or until the berries have softened and the sauce has thickened. Set aside to cool.
  2. In a medium bowl, combine all Cheesecake Filling ingredients and beat until smooth and creamy.
  3. Lay out the Tortillas on a clean surface.
  4. Spread approximately 2 tablespoons of Cheesecake Filling down the center of each tortilla.
  5. Tightly roll up each tortilla and secure with toothpicks if needed.
  6. In a small bowl, mix together the Coating ingredients.
  7. Brush the rolled taquitos lightly with Oil.
  8. Dip each taquito into the Coating mixture, ensuring it's evenly coated.
  9. Place the coated taquitos in the air fryer basket in a single layer. You may need to work in batches.
  10. Air fry at 350°F (175°C) for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  11. Remove toothpicks (if used) and serve immediately with the Berry Compote.
