A refined version of the classic, featuring a homemade pie crust, a touch of hot sauce in the sauce, and a blend of premium cheeses.
Instructions
  1. Prepare the Crust: Combine Flour and Salt in a bowl. Cut in Butter until mixture resembles coarse crumbs. Gradually add Ice Water, mixing until dough comes together. Flatten into a disc, wrap, and chill for 30 minutes.
  2. Preheat oven to 350°F (175°C).
  3. Roll out the chilled dough and place in a 9-inch pie plate. Crimp edges and blind bake for 15-20 minutes, or until lightly golden. Let cool.
  4. Arrange Tomato slices in a single layer in the pre-baked pie crust. Sprinkle with Flaky Sea Salt and Freshly Ground Black Pepper.
  5. In a medium bowl, combine all Sauce ingredients and mix well.
  6. Spread half of the Sauce evenly over the Tomato layer.
  7. Sprinkle 1/2 cup of Cheddar, 1/4 cup of Gruyere, and 1/4 cup of Monterey Jack Cheese over the sauce.
  8. Repeat layers: Tomatoes, remaining Sauce, remaining Cheddar, Gruyere, and Monterey Jack Cheese.
  9. Bake for 45-50 minutes, or until golden brown and bubbly.
  10. Let cool slightly before serving.
