Combine smoked paprika, fennel seed, salt, and pepper. Season Chicken with spice blend and let rest for 30 minutes.
In a saucepan, combine sorghum syrup, apple cider vinegar, sherry, Dijon mustard, fish sauce, and thyme sprig. Bring to a simmer and reduce by half, about 20-25 minutes, until thickened. Remove thyme sprig.
Place Chicken in a baking dish and pour sorghum reduction over, ensuring each piece is coated.
Bake for 55-60 minutes, basting with Sauce every 15 minutes, until Chicken is cooked through and glaze is deeply caramelized.
Let rest for 10 minutes before serving. Sprinkle with smoked pecan dust before serving.
