Apple Jack Fritters

A sophisticated take on apple fritters, featuring a Calvados-infused batter and a tangy crème fraîche glaze.
Instructions
- Prepare the Crème Fraîche Glaze: In a small bowl, whisk together Powdered Sugar, Crème Fraîche, and Calvados until smooth. Set aside.
- In a large bowl, whisk together all Dry Ingredients.
- In a separate bowl, combine all Wet Ingredients.
- Add the Wet Ingredients to the Dry Ingredients and mix until just combined. Do not overmix.
- Gently fold in the diced Apples.
- Heat about 2 inches of Grapeseed Oil in a large, heavy-bottomed pot to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pot.
- Fry for 3-4 minutes per side, or until deep golden brown and cooked through.
- Remove fritters with a slotted spoon and place on a wire rack to drain.
- Drizzle generously with the Crème Fraîche Glaze before serving.
