- Prepare the Pecan Praline: Line a baking sheet with parchment paper. In a saucepan, combine sugar and water. Cook over medium heat, without stirring, until amber in color. Add pecans and cayenne pepper; stir to coat. Pour onto prepared baking sheet and let cool completely. Roughly chop.
- Prepare the Apple Filling: In a large saucepan, combine all Apple Filling ingredients. Cook over medium heat, stirring occasionally, until apples are tender, about 20-25 minutes. Let cool.
- Prepare the Cake: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, allspice, and cardamom.
- In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the molasses and crème fraîche.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Preheat oven to 350°F (175°C).
- Divide the batter into 6 equal portions. On a lightly floured surface, roll each portion into a 9-inch circle.
- Place one cake layer in a 9-inch cake pan. Spread with 1/3 of the Apple Filling and sprinkle with 1/4 of the Pecan Praline. Repeat with remaining cake layers, filling, and praline, ending with a cake layer on top.
- Bake for 35-40 minutes, or until golden brown. Let cool completely before serving.
