Prepare the Burger Patties: Gently combine all Burger Patties ingredients. Form into 4 patties, being careful not to overwork the meat. Let rest for 15 minutes.
Make the Bourbon Reduction: In a saucepan, combine Bourbon and Beef Stock. Bring to a boil and reduce by half. Whisk in cold butter, one cube at a time, until emulsified. Stir in Balsamic Vinegar. Keep warm.
Prepare the Onion Rings: Heat Grapeseed oil in a deep fryer or large pot to 350°F (175°C). Fry onion rings in batches until golden brown and crispy. Drain on paper towels and season with Fleur de sel.
Cook the Burgers: Grill or pan-fry the burger patties to your desired doneness. During the last minute of cooking, place Gruyere cheese on top of each patty to melt.
Assemble the Burgers: Spread a generous amount of Bourbon Reduction on the top bun. Place the patty on the bottom bun, top with Stilton cheese crumbles and crispy onion rings. Cover with the glazed top bun and serve immediately.
