Instructions
  1. Prepare the Burger Patties: In a bowl, combine all Burger Patties ingredients. Gently form into 4 patties. Do not overwork the meat.
  2. Make the Bourbon Glaze: In a small saucepan, combine all Bourbon Glaze ingredients. Bring to a simmer over medium heat and cook for 8-10 minutes, or until slightly thickened and syrupy. Remove from heat.
  3. Prepare the Onion Straws: Toss onion rings in flour. Heat canola oil in a skillet over medium-high heat. Fry onion rings in batches until golden brown and crispy. Drain on paper towels.
  4. Cook the Burgers: Grill or pan-fry the burger patties to your desired doneness. During the last minute of cooking, place cheddar cheese on top of each patty to melt.
  5. Assemble the Burgers: Spread a generous amount of Bourbon Glaze on the top bun. Place the patty on the bottom bun, top with Roquefort or Gorgonzola cheese crumbles and crispy onion straws. Cover with the glazed top bun and serve immediately.
