Instructions
  1. Cut chicken thighs into small, bite-sized pieces. Marinate chicken in Soy sauce, Shaoxing wine, Ginger, and Garlic for 30 minutes.
  2. Combine all Sauce ingredients in a small bowl and set aside.
  3. Prepare Mango Salsa: Combine all Mango Salsa ingredients in a bowl and gently mix. Set aside.
  4. Heat Avocado oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 8-10 minutes.
  5. Pour Sauce over the cooked chicken and stir to coat. Cook for another 4-5 minutes until sauce thickens slightly.
  6. Lightly fry wonton wrappers in hot oil until golden and crispy. Drain on paper towels.
  7. Fill each crispy Won-ton wrapper with a spoonful of the chicken mixture, then top with Mango Salsa.
  8. Serve immediately.
