Instructions
Brine the Chicken: Combine brine ingredients in a pot and bring to a boil. Cool completely. Submerge chicken breasts in brine and refrigerate for at least 4 hours, or overnight.
Prepare the Onion Rings: Slice the onion into rings. In a bowl, whisk together the Beer, Flour, Cornstarch, and Baking Powder. Dip the onion rings into the batter, ensuring they are fully coated.
Prepare the Fries: Peel and hand-cut the potatoes into fries. Rinse in cold water to remove excess starch. Fry twice: first at 325°F (160°C) for 5 minutes, then at 375°F (190°C) for 2-3 minutes until golden brown and crispy. Toss with Truffle Oil and Sea Salt.
Prepare the Aioli: Combine all Aioli ingredients in a small bowl and mix well.
Fry the Chicken: Remove chicken from brine and pat dry. Dredge in the Flour, Rice Flour, Smoked Paprika, and Cayenne pepper mixture. Heat the Peanut oil in a large pot or deep fryer to 350°F (175°C). Fry the chicken for 6-8 minutes, or until golden brown and cooked through.
Fry the Onion Rings: Fry the battered onion rings for 2-3 minutes, or until golden brown and crispy.
Drain all fried items on paper towels. Serve the Chicken, Onion Rings, and Fries with the Aioli.
