What You'll Need

Instructions
  1. Season Chicken with salt, pepper, thyme, garlic and olive oil. Vacuum seal chicken breasts and cook sous vide at 145°F (63°C) for 1.5 hours. After sous vide, sear chicken in a hot pan for 2-3 minutes per side to develop a golden crust.
  2. Prepare the Sauce by whisking together all Sauce ingredients in a small bowl.
  3. Cook bacon until crispy.
  4. Lightly toast the Pretzel buns.
  5. Spread a layer of Caramelized onion jam on the bottom bun. Spread Sauce on the top bun.
  6. Place the seared chicken breast on the bottom bun. Top with 2 slices of bacon, a slice of Gruyere cheese, arugula, and heirloom tomato slices.
  7. Cover with the top bun and serve immediately.
