Instructions
  1. Prepare the Tempura Batter: Whisk together Cake Flour and Cornstarch. Gently whisk in Ice Water and Egg Yolk until just combined – do not overmix.
  2. Prepare the Yuzu Glaze: In a saucepan, combine all Yuzu Glaze ingredients and simmer over medium heat for 5-7 minutes, until slightly reduced and glossy.
  3. Heat Canola Oil in a deep fryer or large pot to 350°F (175°C).
  4. Dip each Shrimp into the Tempura Batter, ensuring it's fully coated.
  5. Carefully fry the Shrimp in batches for 2-3 minutes, until golden and crispy. Drain on paper towels.
  6. Toss the fried Shrimp with the Yuzu Glaze until evenly coated.
  7. Garnish with Black Sesame Seeds and Microgreens before serving.
