Instructions
- Prepare smoker to 225°F (107°C) with your preferred wood (hickory or apple recommended).
- Combine all Ribs ingredients in a bowl and rub generously over the ribs. Let rest for 1 hour.
- Smoke ribs for 3-4 hours, or until tender. Maintain consistent temperature.
- While ribs are smoking, prepare the Sauce by combining all Sauce ingredients in a saucepan. Bring to a simmer over medium heat and cook for 20 minutes, stirring occasionally, until reduced and slightly thickened.
- Increase smoker temperature to 275°F (135°C). Brush ribs generously with the Sauce.
- Continue smoking for another 20-30 minutes, brushing with Sauce every 10 minutes, until sauce is caramelized.
- Let rest for 15 minutes before serving.
