1 lb Wagyu ground beef
1 tbsp Shallots-minced
1 tsp Garlic-minced
1/2 tsp Smoked paprika
1/2 tsp Salt

A premium take on the Applebee's classic, featuring a Wagyu beef patty, homemade queso with roasted poblanos, and artisanal tortillas.
Instructions
  1. Roast Poblano peppers over an open flame or under a broiler until blackened. Place in a bowl, cover with plastic wrap, and let steam for 10 minutes. Peel, seed, and dice the roasted poblanos.
  2. In a bowl, combine all Burger Patties ingredients and form into 4 patties.
  3. Cook the patties in a cast iron skillet over medium-high heat for 4-5 minutes per side for medium-rare, or longer to desired doneness.
  4. While patties cook, prepare the Queso Sauce. In a saucepan, melt Butter over medium heat. Add Heavy cream and heat through. Reduce heat to low and gradually add Shredded Oaxaca and Asadero cheeses, stirring constantly until melted and smooth. Stir in Chipotle powder and diced roasted Poblanos.
  5. Lightly warm the Artisanal flour tortillas.
  6. Spread Spicy aioli on one tortilla. Layer with Arugula, Heirloom tomato, and Pickled red onion. Top with a cooked Burger Patty and generously drizzle with Queso Sauce. Top with the second tortilla.
  7. Serve immediately.
