In a bowl, combine all Burger Patties ingredients and form into 4 patties.
Cook the patties in a skillet over medium-high heat for 5-7 minutes per side, or until cooked through.
While patties cook, prepare the Queso Sauce. In a saucepan, melt Butter over medium heat. Add Milk and heat through. Reduce heat to low and gradually add Shredded Monterey Jack and Pepper Jack cheeses, stirring constantly until melted and smooth. Stir in Chili powder and Cayenne pepper.
Lightly warm the Flour tortillas.
Spread Chipotle mayonnaise on one tortilla. Layer with Romaine lettuce, Tomato, and Red onion. Top with a cooked Burger Patty and generously drizzle with Queso Sauce. Top with the second tortilla.
Serve immediately.
