Instructions
Gently form Wagyu ground beef into 4 patties, seasoning with Sea Salt and Freshly Ground Black Pepper. Avoid overworking the meat.
Prepare Chipotle Aioli: In a small bowl, combine Mayonnaise, minced Chipotle Peppers in Adobo Sauce, and Lime Juice. Mix well and set aside.
Prepare Chorizo Queso: In a large skillet, heat Olive Oil over medium heat. Add Chorizo and cook, breaking it up with a spoon, until browned and cooked through. Remove Chorizo and set aside.
Add Flour to the skillet and cook for 1 minute, creating a roux. Gradually whisk in Heavy Cream until smooth. Bring to a simmer, stirring constantly.
Reduce heat to low and stir in Pepper Jack and Monterey Jack Cheese until melted and smooth. Stir in cooked Chorizo and Diced Poblano Pepper.
Cook patties on a grill or in a cast iron skillet to desired doneness (medium-rare recommended).
Lightly toast Artisan Brioche Buns.
Assemble burgers: Spread Chipotle Aioli on both halves of each bun. Place a patty on the bottom bun, top with Chorizo Queso, and Pickled Jalapeños. Cover with the top bun and serve immediately.
