Instructions
  1. Gently form Wagyu ground beef into 4 patties, seasoning with Sea Salt and Freshly Ground Black Pepper. Avoid overworking the meat.
  2. Prepare Chipotle Aioli: In a small bowl, combine Mayonnaise, minced Chipotle Peppers in Adobo Sauce, and Lime Juice. Mix well and set aside.
  3. Prepare Chorizo Queso: In a large skillet, heat Olive Oil over medium heat. Add Chorizo and cook, breaking it up with a spoon, until browned and cooked through. Remove Chorizo and set aside.
  4. Add Flour to the skillet and cook for 1 minute, creating a roux. Gradually whisk in Heavy Cream until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat to low and stir in Pepper Jack and Monterey Jack Cheese until melted and smooth. Stir in cooked Chorizo and Diced Poblano Pepper.
  6. Cook patties on a grill or in a cast iron skillet to desired doneness (medium-rare recommended).
  7. Lightly toast Artisan Brioche Buns.
  8. Assemble burgers: Spread Chipotle Aioli on both halves of each bun. Place a patty on the bottom bun, top with Chorizo Queso, and Pickled Jalapeños. Cover with the top bun and serve immediately.
