Instructions
  1. In a bowl, combine all Burger Patties ingredients and gently form into 4 patties. Avoid overworking the meat.
  2. Heat a cast iron skillet or grill over medium-high heat. Cook patties for 4-5 minutes per side for medium-rare, or longer for desired doneness.
  3. While patties are cooking, prepare the Queso Sauce. In a saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1 minute, creating a roux.
  4. Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat to low and stir in Monterey Jack and Cheddar Cheese until melted and smooth. Stir in Diced Tomatoes with Green Chilies, Cumin, and Cayenne Pepper.
  6. Lightly toast Brioche hamburger buns.
  7. Assemble burgers: Place a patty on each bun, top with Queso Sauce, Pico de Gallo, and Tortilla Strips. Serve immediately.
