Instructions
  1. Combine all Dry Rub ingredients in a small bowl.
  2. Rub the Dry Rub generously all over the Pork Riblets.
  3. Smoke the Riblets at 225°F (107°C) for 2-3 hours, or until tender. Use a fruit wood like apple or cherry for best results.
  4. While Riblets are smoking, prepare the Sauce. In a small saucepan, combine all Sauce ingredients. Bring to a simmer over medium heat and cook for 15-20 minutes, stirring occasionally, until reduced and slightly thickened.
  5. During the last 30 minutes of smoking, brush the Riblets with the Sauce every 10 minutes.
  6. Remove Riblets from smoker and let rest for 10 minutes before serving. Garnish with chopped parsley.
