Instructions
Brine Chicken in salted water for 30 minutes, then pat dry. Marinate Chicken with Olive oil, Lemon zest, Thyme, Sea salt, and Black pepper for at least 30 minutes.
Cook Chicken sous vide at 145°F (63°C) for 1 hour, then sear in a hot skillet for 2-3 minutes per side to develop a golden crust. Let rest and slice.
Cook Pasta in heavily salted water according to package directions. Reserve 1 cup of pasta water before draining.
While pasta cooks, melt Butter in a large saucepan over medium heat. Add Garlic and cook for 1 minute until fragrant.
Deglaze the pan with Sherry, scraping up any browned bits. Let simmer for 3-4 minutes until reduced by half.
Pour in Heavy cream and bring to a simmer. Reduce heat to low and stir in Parmigiano-Reggiano and Grana Padano cheeses until melted and smooth.
Gently fold in Burrata cheese until partially melted.
Stir in Nutmeg.
Add cooked Chicken and Pasta to the Sauce. Toss to coat, adding reserved pasta water as needed to reach desired consistency.
