Instructions
  1. Gently form dry-aged beef into 4 patties, avoiding overworking the meat. Season with sea salt and black pepper.
  2. To make Whiskey Bacon Onion Jam, render pork belly in a heavy-bottomed pan until crispy. Remove pork belly and set aside. Reserve rendered fat.
  3. Add sliced onions to the pork belly fat and cook over low heat for 30-40 minutes, until deeply caramelized. Deglaze with bourbon whiskey, then stir in maple syrup and balsamic vinegar. Simmer for 10-15 minutes, then crumble in cooked pork belly. Set aside.
  4. Grill or pan-sear burger patties to desired doneness, using a cast iron skillet for optimal crust.
  5. During the last minute of cooking, top patties with Smoked Gouda cheese and allow to melt.
  6. Toast pretzel buns.
  7. Spread truffle aioli on the top bun. Assemble burgers with patty, Whiskey Bacon Onion Jam, arugula. Serve immediately.
