In a bowl, combine all Burger Patties ingredients and gently mix. Form into 4 patties.
To make Whiskey Bacon Jam, cook bacon until crispy. Remove bacon and set aside, reserving 2 tbsp of bacon fat in the pan. Dice bacon and set aside.
Add diced onion to the bacon fat and cook until caramelized, about 15-20 minutes. Add Whiskey and deglaze the pan. Stir in brown sugar and apple cider vinegar. Simmer for 5-7 minutes, then stir in diced bacon. Set aside.
Grill or pan-fry burger patties to desired doneness.
During the last minute of cooking, top patties with cheddar cheese and allow to melt.
Toast brioche buns.
Spread garlic aioli on the top bun. Assemble burgers with patty, Whiskey Bacon Jam, caramelized onions. Serve immediately.
