Instructions
  1. Prepare the Whisky Reduction: In a small saucepan, combine Scotch whisky, balsamic vinegar, maple syrup, and thyme sprig. Bring to a simmer over medium heat and reduce by half, about 15-20 minutes, until syrupy. Remove thyme sprig and set aside.
  2. Prepare the Pickled Red Onion: Quick pickle red onion slices in a mixture of vinegar, sugar, and salt for at least 30 minutes.
  3. Form the Burger Patties: Gently combine all Burger Patties ingredients. Form into 4 thick patties. Dimple the center of each patty to prevent bulging during cooking.
  4. Cook the Bacon: Cook bacon until crispy. Set aside on paper towels to drain.
  5. Cook the Burgers: Heat a cast iron skillet over high heat. Sear patties for 3-4 minutes per side for medium-rare. Top with aged white cheddar during the last minute of cooking.
  6. Assemble the Burgers: Lightly toast pretzel buns. Spread a generous amount of Whisky Reduction on both halves of each bun. Place arugula on the bottom bun, followed by the cheeseburger patty, bacon, pickled red onion, and top bun. Serve immediately.
