- Prepare the Beef: Preheat oven to 300°F (150°C). Rub Beef Chuck Roast with Olive Oil, Garlic, and Rosemary. Sear in a hot skillet on all sides. Place in a roasting pan and cook for 3-4 hours, or until fork-tender. Let rest, then thinly slice.
- Prepare the Cheese Sauce: In a saucepan, melt Butter over medium heat. Whisk in Dijon Mustard. Gradually whisk in Heavy Cream until smooth. Bring to a simmer, stirring constantly.
- Reduce heat to low and stir in Aged White Cheddar and Gruyere Cheese, and Nutmeg until cheese is melted and sauce is smooth.
- Caramelize the Red Onion: Slowly cook sliced Red Onion in butter over low heat until deeply caramelized.
- Assemble the Sandwiches: Place sliced Beef on the bottom half of each Pretzel Roll.
- Top with Caramelized Red Onion and generously drizzle with Cheese Sauce.
- Cover with the top half of the roll and serve immediately.
