Instructions
  1. Prepare the Beef: Preheat oven to 300°F (150°C). Rub Beef Chuck Roast with Olive Oil, Garlic, and Rosemary. Sear in a hot skillet on all sides. Place in a roasting pan and cook for 3-4 hours, or until fork-tender. Let rest, then thinly slice.
  2. Prepare the Cheese Sauce: In a saucepan, melt Butter over medium heat. Whisk in Dijon Mustard. Gradually whisk in Heavy Cream until smooth. Bring to a simmer, stirring constantly.
  3. Reduce heat to low and stir in Aged White Cheddar and Gruyere Cheese, and Nutmeg until cheese is melted and sauce is smooth.
  4. Caramelize the Red Onion: Slowly cook sliced Red Onion in butter over low heat until deeply caramelized.
  5. Assemble the Sandwiches: Place sliced Beef on the bottom half of each Pretzel Roll.
  6. Top with Caramelized Red Onion and generously drizzle with Cheese Sauce.
  7. Cover with the top half of the roll and serve immediately.
