Instructions
  1. Preheat oven to 450°F (232°C).
  2. To make the Biscuits, whisk together the Flour, Baking Powder, Baking Soda, and Salt in a large bowl.
  3. Cut in the Cold Butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. Gradually add the Buttermilk, mixing until just combined. Do not overmix.
  5. Turn dough out onto a lightly floured surface and pat down to about 3/4 inch thickness. Cut out biscuits using a biscuit cutter or a knife.
  6. Place biscuits on an ungreased baking sheet and bake for 12-15 minutes, or until golden brown.
  7. While biscuits are baking, make the Chocolate Gravy. Melt the Butter in a saucepan over medium heat.
  8. Whisk in the Flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  9. Gradually whisk in the Whole Milk, ensuring no lumps form.
  10. Add the Cocoa Powder, Brown Sugar, Vanilla Extract, Espresso Powder, and Salt. Bring to a simmer, stirring constantly, and cook until thickened, about 5-7 minutes.
  11. Split the warm Biscuits and smother with the Chocolate Gravy. Serve immediately.
