Aunt Agatha's Winter Squash And Chestnut Gratin
A comforting and classic gratin featuring sweet winter squash, earthy chestnuts, and a creamy cheese sauce.

A comforting and classic gratin featuring sweet winter squash, earthy chestnuts, and a creamy cheese sauce.
Instructions
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- Steam or boil Squash until tender, about 20 minutes. Drain well.
- In a medium saucepan, melt Butter over medium heat. Whisk in Flour and cook for 1-2 minutes, creating a roux.
- Gradually whisk in Milk until smooth. Bring to a simmer, stirring constantly. Cook for 5-7 minutes, or until thickened.
- Stir in Nutmeg, Salt, and Pepper. Remove from heat and stir in Cheddar Cheese until melted and smooth. This is your Cheese Sauce.
- In the prepared baking dish, layer Squash and Chestnuts. Pour Cheese Sauce over the top, ensuring everything is well coated.
- In a small bowl, combine Breadcrumbs and melted Butter. Sprinkle evenly over the gratin.
- Bake for 20-25 minutes, or until golden brown and bubbly. Let cool slightly before serving.
