Instructions
  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Melt Butter in a large skillet over medium heat. Add Leeks and cook until softened, about 10-15 minutes. Set aside to cool slightly.
  3. In a large bowl, whisk together all Custard ingredients.
  4. Add Bread cubes to the Custard and toss to coat. Let sit for 15 minutes, allowing the bread to absorb the liquid.
  5. Gently fold in the cooked Leeks and half of the Gruyere Cheese.
  6. Pour the mixture into the prepared baking dish. Sprinkle the remaining Gruyere Cheese over the top.
  7. Bake for 45-50 minutes, or until golden brown and set. Let cool slightly before serving.
