Instructions
  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Melt Butter in a large skillet over medium heat. Add Leeks and Thyme and cook until softened, about 12-18 minutes. Set aside to cool slightly.
  3. In a large bowl, whisk together all Custard ingredients.
  4. Add Bread cubes to the Custard and toss to coat. Let sit for 20 minutes, allowing the bread to absorb the liquid.
  5. Gently fold in the cooked Leeks, Gruyere Cheese, and Parmesan Cheese.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 50-55 minutes, or until golden brown and set. Let cool slightly before serving.
