  1. Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Cook the Bacon and Onion: In a skillet, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the bacon grease in the skillet. Add the diced onion to the skillet and cook until softened, about 5 minutes.
  3. Prepare the Filling: In a bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cooked bacon and onion.
  4. Assemble and Bake: Preheat oven to 375°F (190°C). Roll out the chilled dough and place it in a 9-inch pie plate. Pour the egg mixture into the crust. Sprinkle with cheddar cheese. Bake for 30-40 minutes, or until the crust is golden brown and the filling is set.
  5. Let cool slightly before serving.
