2 pounds Yukon Gold Potatoes-peeled and quartered
8 slices Thick-Cut Bacon-cut into 1/2 inch pieces
1 head Garlic-whole head
1/2 cup Heavy Cream
4 tablespoons Butter

Creamy mashed potatoes elevated with the subtle sweetness of roasted garlic, crispy bacon, and a blend of cheddar cheeses.
Instructions
  1. Preheat oven to 400°F (200°C). Cut the top off the Garlic head, drizzle with olive oil, wrap in foil, and roast for 45-60 minutes, or until soft and fragrant.
  2. Place Potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.
  3. While Potatoes are cooking, cook Bacon in a large skillet over medium heat until crispy. Remove Bacon with a slotted spoon and drain on paper towels. Reserve 2 tablespoons of Bacon grease.
  4. Drain Potatoes and return them to the pot. Squeeze the roasted Garlic cloves from the head into the pot. Add Butter, Heavy Cream, Sour Cream, Salt, White Pepper, and Nutmeg. Mash until smooth.
  5. Stir in Cheddar Cheese and Gruyere Cheese, and most of the cooked Bacon, reserving some for garnish.
  6. Serve immediately, garnished with remaining Bacon.
