Instructions
  1. Cook Ground Beef in a skillet over medium-high heat until browned, breaking it up with a spoon. Drain off any excess grease.
  2. Season the Ground Beef with all Seasoning ingredients. Stir to combine.
  3. Prepare Special Sauce by combining all Special Sauce ingredients in a small bowl. Mix well.
  4. Warm Tortillas slightly to make them more pliable.
  5. Spread 1 tbsp of Special Sauce onto 4 Tortillas.
  6. Sprinkle 1/2 cup of combined Cheddar and Monterey Jack Cheese onto each sauced Tortilla.
  7. Top with 1/4 of the seasoned Ground Beef, 1/8 of the Bacon, and another 1/2 cup of combined Cheese.
  8. Cover with the remaining 4 Tortillas.
  9. Cook in a large skillet over medium heat for 3-4 minutes per side, or until golden brown and the cheese is melted.
  10. Cut into wedges and serve with Diced Red Onion and Shredded Iceberg Lettuce.
