1 pound Cavatappi Pasta
1/2 cup Butter
1/3 cup All-Purpose Flour
3 cups Milk

Instructions
  1. Cook the Cavatappi Pasta according to package directions. Drain and set aside.
  2. While pasta is cooking, cook the Thick-Cut Bacon until crispy. Crumble and set aside.
  3. In a large saucepan, melt the Butter over medium heat. Whisk in the All-Purpose Flour and cook for 1-2 minutes, creating a roux.
  4. Gradually whisk in the Milk until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat to low and stir in the Shredded Cheddar Cheese, Shredded Smoked Gouda Cheese, Salt, Black Pepper, and Nutmeg until the cheese is melted and the sauce is smooth.
  6. Add the cooked Pasta to the cheese sauce and stir to combine. Stir in half of the crumbled Bacon.
  7. Let the mac and cheese cool slightly. Roll into 1-inch balls.
  8. Insert a Lollipop Stick into each ball.
  9. Place the mac and cheese lollipops on a baking sheet lined with parchment paper and freeze for at least 30 minutes.
  10. Dip the frozen lollipops in the Panko Breadcrumbs, pressing to adhere. Then, press the lollipops into the remaining crumbled Bacon.
  11. Serve immediately.
