Instructions
  1. Preheat oven to 425°F (220°C).
  2. Place cubed Potatoes in a large pot and cover with cold water. Bring to a boil and cook for 5-7 minutes, until slightly tender. Drain well and pat dry.
  3. In a large bowl, toss the drained Potatoes with Duck Fat until evenly coated.
  4. Spread the seasoned Potatoes in a single layer on a baking sheet.
  5. Roast for 30-35 minutes, flipping halfway through, until golden brown and crispy.
  6. While the potatoes are roasting, cook the diced Smoked Bacon in a skillet until crispy. Drain on paper towels.
  7. To make the Truffle Ranch Dressing, whisk together Buttermilk, Mayonnaise, chopped Chives, chopped Dill, Garlic Powder, Onion Powder, Black Pepper, and White Truffle Oil in a bowl. Adjust seasoning to taste.
  8. Remove the potatoes from the oven and transfer to a serving bowl. Toss with the Truffle Ranch Dressing and cooked Bacon.
  9. Top with Grated Parmesan Cheese and thinly sliced Green Onions. Serve immediately.
