Instructions
  1. Blanch corn in boiling salted water for 3-4 minutes. Immediately transfer to an ice bath to stop cooking.
  2. Combine all Chipotle-Lime Butter ingredients in a bowl and mix well.
  3. Wrap each ear of corn tightly with 3 slices of bacon, overlapping slightly.
  4. Preheat grill to medium-high heat.
  5. Grill corn for 10-12 minutes, turning frequently, until bacon is crispy and corn is slightly charred.
  6. Brush generously with Chipotle-Lime Butter during the last 3-5 minutes of grilling.
  7. Season with Sea salt and Black pepper before serving.
