Instructions
- Blanch corn in boiling salted water for 3-4 minutes. Immediately transfer to an ice bath to stop cooking.
- Combine all Chipotle-Lime Butter ingredients in a bowl and mix well.
- Wrap each ear of corn tightly with 3 slices of bacon, overlapping slightly.
- Preheat grill to medium-high heat.
- Grill corn for 10-12 minutes, turning frequently, until bacon is crispy and corn is slightly charred.
- Brush generously with Chipotle-Lime Butter during the last 3-5 minutes of grilling.
- Season with Sea salt and Black pepper before serving.
