Instructions
  1. Preheat oven to 350°F (175°C).
  2. Red Wine Reduction: In a saucepan, combine Red wine, Beef broth, and Balsamic vinegar. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until reduced to a syrupy consistency. Whisk in Butter at the end.
  3. In a large bowl, combine all Meatloaf ingredients. Mix gently but thoroughly.
  4. Shape the mixture into a loaf and place in a loaf pan.
  5. Combine all Porcini Crust ingredients in a small bowl and press evenly onto the top of the meatloaf.
  6. Wrap the loaf with Pancetta slices, overlapping as needed.
  7. Bake for 75-90 minutes, or until the internal temperature reaches 160°F (71°C).
  8. Let rest for 10 minutes before slicing and serving with the Red Wine Reduction.
