Instructions
  1. Preheat oven to 350°F (175°C).
  2. Caramelize Onions: Heat Olive oil in a skillet over medium heat. Add Onion and Sugar, cook slowly for 30-40 minutes, stirring occasionally, until deeply golden brown and caramelized. Set aside.
  3. In a large bowl, combine all Meatloaf ingredients, including the caramelized onions. Mix gently but thoroughly.
  4. Shape the mixture into a loaf and place in a loaf pan.
  5. Wrap the loaf with Bacon slices, overlapping as needed.
  6. In a small bowl, whisk together all Glaze ingredients.
  7. Spread half of the Glaze over the bacon-wrapped meatloaf.
  8. Bake for 60-75 minutes, or until the internal temperature reaches 160°F (71°C).
  9. During the last 15 minutes of baking, spread the remaining Glaze over the meatloaf.
