1 pound Jumbo Shrimp-peeled and deveined
12 slices Applewood Smoked Bacon-thick cut
1 cup Coarse Ground Polenta
4 cups Shrimp Stock
1/2 cup Parmesan Cheese-grated

A refined take on the classic, featuring Andouille spice rub, artisanal bacon, and creamy Parmesan polenta.
Instructions
  1. Preheat oven to 400°F (200°C).
  2. Combine all Spice Rub ingredients in a small bowl.
  3. Season Shrimp with Spice Rub.
  4. Wrap each Shrimp with a slice of Applewood Smoked Bacon and secure with a toothpick.
  5. Place Bacon-Wrapped Shrimp on a baking sheet and bake for 15-20 minutes, or until Bacon is crispy and Shrimp is cooked through.
  6. While Shrimp are baking, prepare Polenta. In a medium saucepan, bring Shrimp Stock to a boil.
  7. Gradually whisk in Polenta and reduce heat to low. Simmer for 30-40 minutes, stirring frequently, until Polenta is creamy and smooth.
  8. Stir in Butter and Parmesan Cheese until melted and smooth. Season with Salt and White Pepper to taste.
  9. Serve Bacon-Wrapped Shrimp over creamy Parmesan Polenta. Garnish with Chopped Chives.
