Bacon-Wrapped Shrimp And Grits
A refined take on the classic, featuring Andouille spice rub, artisanal bacon, and creamy Parmesan polenta.

A refined take on the classic, featuring Andouille spice rub, artisanal bacon, and creamy Parmesan polenta.
Instructions
- Preheat oven to 400°F (200°C).
- Combine all Spice Rub ingredients in a small bowl.
- Season Shrimp with Spice Rub.
- Wrap each Shrimp with a slice of Applewood Smoked Bacon and secure with a toothpick.
- Place Bacon-Wrapped Shrimp on a baking sheet and bake for 15-20 minutes, or until Bacon is crispy and Shrimp is cooked through.
- While Shrimp are baking, prepare Polenta. In a medium saucepan, bring Shrimp Stock to a boil.
- Gradually whisk in Polenta and reduce heat to low. Simmer for 30-40 minutes, stirring frequently, until Polenta is creamy and smooth.
- Stir in Butter and Parmesan Cheese until melted and smooth. Season with Salt and White Pepper to taste.
- Serve Bacon-Wrapped Shrimp over creamy Parmesan Polenta. Garnish with Chopped Chives.
