Instructions
  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub the Yukon Gold Potatoes.
  3. Prick each potato several times with a fork.
  4. Rub the potatoes with olive oil and sprinkle with Salt and Pepper.
  5. Bake for 60-75 minutes, or until tender when pierced with a fork.
  6. Prepare the Truffle Butter: Combine the softened Butter and Truffle Oil in a bowl. Mix well.
  7. Prepare the Short Rib Ragu: Sear the Short Ribs in a Dutch oven until browned on all sides. Remove the ribs and set aside. Add the Onion, Carrots, and Celery to the Dutch oven and cook until softened. Deglaze the pot with the Red Wine and simmer until reduced by half. Add the Crushed Tomatoes and the Short Ribs. Bring to a simmer, cover, and cook for 3-4 hours, or until the ribs are tender. Shred the meat and return it to the sauce.
  8. Once potatoes are cooked, slice them open and fluff the insides with a fork.
  9. Serve immediately with the Truffle Butter, Blue Cheese & Walnut Crumbles, Short Rib Ragu, Crème Fraîche, and Fresh Chives.
