Instructions
  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub the Potatoes.
  3. Prick each potato several times with a fork.
  4. Rub the potatoes with a little oil and sprinkle with Salt and Pepper.
  5. Bake for 60-75 minutes, or until tender when pierced with a fork.
  6. While potatoes are baking, prepare the Chili: Brown the Ground Beef in a large pot. Drain off any excess fat. Add the Onion and cook until softened. Stir in the Diced Tomatoes, Kidney Beans, and Chili Powder. Bring to a simmer and cook for 20 minutes.
  7. Prepare the Broccoli Cheese Sauce: Melt the Butter in a saucepan. Whisk in the Flour and cook for 1 minute. Gradually whisk in the Milk and cook until thickened. Stir in the Cheddar Cheese until melted. Stir in the Steamed Broccoli.
  8. Once potatoes are cooked, slice them open and fluff the insides with a fork.
  9. Serve immediately with the Chili, Broccoli Cheese Sauce, Sour Cream, Green Onions, Bacon Bits, and Butter.
