Instructions
  1. Make the Brown Butter Wafers: Melt Butter in a saucepan over medium heat, cooking until browned and fragrant. Let cool slightly. Whisk in Flour, Powdered Sugar, and Salt. Roll out dough and cut into wafer shapes. Bake at 350°F (175°C) for 8-10 minutes.
  2. Make the Custard: In a saucepan, heat Cream, Milk, and Sugar until simmering. Whisk Egg Yolks and slowly temper with the hot cream mixture.
  3. Pour back into the saucepan and cook for 1-2 minutes, stirring constantly, until thickened. Remove from heat and stir in Bourbon, Vanilla Bean Paste, and Salt.
  4. Let the Custard cool completely.
  5. In a serving dish, layer Brown Butter Wafers, sliced Bananas, and Custard. Repeat layers.
  6. Refrigerate for at least 4 hours, or preferably overnight.
  7. Garnish with chopped Pecan Praline before serving.
