Instructions
  1. Preheat oven to 400°F (200°C). Scrub potatoes and pierce several times with a fork.
  2. Bake potatoes for 60-75 minutes, or until tender when pierced with a fork.
  3. While potatoes are baking, prepare the chicken. In a bowl, combine Chicken ingredients and toss to coat.
  4. Heat a large skillet over medium-high heat. Add chicken and cook for 6-8 minutes per side, or until cooked through.
  5. Remove chicken from skillet and shred with two forks.
  6. Pour BBQ Sauce into the skillet and simmer for 5 minutes, stirring occasionally.
  7. Add shredded chicken to the BBQ Sauce and toss to coat.
  8. Once potatoes are cooked, carefully slice open and fluff the insides with a fork.
  9. Top each potato with BBQ Chicken, Cheddar Cheese, Sour Cream, and Green Onions.
  10. Serve immediately.
